Ossau Iraty is a traditional cheese from the Basque region made from sheep’s milk. Matured a minimum of 6 months, the taste of Ossau-Iraty cheese is delicately fruity, with a slight hazelnut flavour.
Description
Sheep’s milk cheese has been produced in the mountains of the Basque Country and Béarn since the dawn of time with endemic breeds of sheep, perfectly adapted to the hilly terrain and rugged relief of our valleys. For a long time, sheep’s cheese was one of the main staple foods found on every farm.
Today, Ossau-Iraty is the only Pyrenean sheep’s milk cheese with a protected designation of origin. It comes from three local breeds of ewe from the Béarn and Basque regions.
A cheese of character, Ossau Iraty AOP is recognizable by the Manech ewe’s head stamped on each tomme.
We offer you a farmhouse cheese, made from raw milk from a single flock of 300 Manech hardy ewes, farmed in Saint-Etienne-de-Baigorri. Matured in cellars for over 6 months, this cheese is characterized by its beautiful white color, smooth appearance, fruity notes and softness on the palate.
Ossau Iraty can be enjoyed on any occasion, as an aperitif on a platter, or as a starter, main course or dessert.
Note: Ossau Iraty is traditionally served with black cherry jam, but try it with our Espelette chili pepper jelly or jam! Spice up your everyday life!
