PDO Espelette chilli pepper dry rope

A true emblem of the Basque Country, the string of chillies is associated with the entire history of our village and our region. An ancestral method of drying and preserving peppers, they were patiently tied one by one to a string by hand using a needle. The ropes were then hung on the eastern facades of the houses, under the steep eaves of the Etxe (“house”), to protect them from the weather. From September onwards, the chillies were slowly dried by the hot south wind (Haize Egoa). At the end of the season, the ropes were taken down to finish drying overnight in the farm’s bread oven. The chillies were then coarsely ground to obtain the famous Espelette chilli powder. Today, we continue this tradition to produce one of the finest products in gastronomy.
Add a touch of class to the interior or exterior of your home with our sublime strings of Espelette chilli peppers. Simply remove a chilli pepper from your rope when cooking to add a little to your recipe.  The chilli will rehydrate and add the perfect flavour to all your dishes. When you’re ready to eat you can also gently grind a chilli into small shavings to bring out all the flavour of your ratatouille, broth, piperade or homemade sauce.
