Welcome to the Atelier du Piment, a place of work and life created in 2002 as a venue for deliciously authentic encounters. From the field to tasting, Ramuntxo and his family provide you with the opportunity to discover all the secrets of a produce that is unique in the world: Espelette pimento pepper. Origin, tradition, expertise and quality are the cornerstones of this farming production.

This is how Ramuntxo sees his life. Born in the heart of the Basque Country in 1976, as soon as he graduated in aquaculture, Ramuntxo set sail to visit the world’s ports looking for extraordinary fish… It was the call of his homeland and its emblematic plant that brought him back to Euskadi, the Basque Country. In 2000, he settled in Espelette to produce and transform Espelette pimento pepper.
No stronger than pepper but ten times more fragrant, Espelette pimento pepper lifts the flavour of most dishes and combines its elegant aroma with numerous products. It has a virtually infinite number of possibilities to delight the palate: powder, jelly, seasoned salt, pimento sauces and mustard, ham, rillettes, dried sausages and duck foie gras with pimento, black cherry cream, jams and chocolates with pimento, etc. To celebrate such a generous contribution to everyone’s taste buds, Espelette pimento pepper is the guest of honour at festivities held annually during the last weekend in October.
The village of Espelette – Ezpeleta in Basque – is situated in the Basque province of Labourd at the foot of the Pyrenean Mountains and just 20 minutes from the Atlantic Coast. Its picture postcard setting, its festivities and authentic appeal make Espelette irresistibly attractive. With its little streets lined with traditional white, half-timbered houses whose facades are festooned with cords of glistening pimento peppers, its pedestrian village centre, recently restored chateau, magnificent church, ancient wash house and the silhouette of Mount Mondarrain on the horizon – what’s not to love?
